RASAM

Rasam is a South Indian soup. This simple and humble comforting soup possesses a lot of medical values as its simmered with healing spices. It aids in digestion and geeat to have during cold and stomach upset.

Ingredients:

  • 1/4 teaspoon fenugreek seeds
  • 2 dried red chilli
  • 2 teaspoon cumin seeds
  • 1 teaspoon pepper corns
  • 1 teaspoon mustard seeds
  • 3-4 garlic cloves
  • 8-10 curry leaves
  • 3 chopped tomatoes
  • 1-2 teaspoons jaggery
  • Salt to taste
  • Coriander leaves for garnish

Instructions

    How to make the Spice powder :

  • To a pan add 1/4 teaspoon fenugreek seeds & one dried red chilli. On a low flame dry roast them until the methi turns slightly aromatic.
  • Add 1 1/2 teaspoon cumin seeds and 1/2 teaspoon pepper corns
  • Roast all of them till they turn slightly dark and aromatic. Remove and coarsely crush it in a mortar pestle.
  • Keep aside the spice powder
  • Add 1 1/2 teaspoon oil to hot pot.Add half broken red chilli. 1/2 teaspoon cumin seeds and mustard seeds.
  • As soon as they begin to splutter, then add 3 to 4 crushed garlic, 1 sprig curry leaves and a pinch of hing.Saute well till the leaves turn crisp.
  • Add 1 to 1 1/2 cups of chopped or mashed tomatoes. Sprinkle 1/2 teaspoon salt and 1/8 teaspoon turmeric
  • Cover and cook till the tomatoes turn mushy
  • Add spice powder(as mentioned above) and mix well.
  • Pour 2- 3 cups of water. Add one teaspoon tamarind paste.
  • Add 1 -2 teaspoons of jaggery to balance the flavours
  • Bring it to a boil and simmer for 5 minutes.
  • Taste and add more salt, jaggery if required
  • Add chopped coriander as garnish.
