PUMPKIN PEPPER SOUP

Pumpkin soup improves your blood pressure and cholesterol levels, making your heart healthier. Pumpkin soup plays an important role in reducing your risk of metabolic syndrome.

Ingredients:

  • 1/2 teaspoon olive oil
  • 1 chopped onion
  • 2-3 garlic and ginger
  • 1/4 pumpkin
  • 1 cup vegetable broth
  • Crushed pepper

Instructions

  • First, heat olive oil in a large pot and sauté the onion until it’s soft and translucent (about 5-10 minutes).
  • Add the garlic,ginger and pepper, vegetable broth and pumpkin. Bring to a boil, cover, and reduce heat to low. Simmer, covered, for about 15-20 mins
  • Transfer the soup to a regular blender to puree.
  • Next, stir in the coconut milk
  • Add basil or any other herbs for garnish.
