CHICKPEA & APPLE SALAD

Refreshing, crunchy and full of flavour.

Ingredients:

  • 4 spring onions chopped
  • 4 apples diced
  • 400g tin chickpeas rinsed and drained
  • ½ a bunch coriander chopped
  • For the dressing – curry paste, sliced mango,greek yoghurt and lime juice
  • Lettuce leaves for plating

Instructions

  • Mix together the dressing ingredients until well combined.
  • Add to the rest of the salad ingredients, except the lettuce leaves (and breserve some coriander for garnishing), and toss with some seasoning. Arrange the lettuce leaves on a plate and pile the salad on top. Finish by sprinkling over the rest of the coriander
